Abstract
An ice confection coating of an aqueous based sol containing a pectin and a setting agent in an amount sufficient to cause gelation of the sol. Also included are methods for preparing the coating, methods for applying the coating, and the resultant coated ice confection products.
Claims25
An ice confection gel coating comprising a gelled pectin having structural integrity at 25° C. that is provided by the reaction product at no greater than 30° C. of an aqueous based sol of a pectin and a setting agent which is present in an amount sufficient to cause gelation of the sol.
