Abstract
A method of drying a water-containing foodstuff or beverage at a temperature above ambient, is characterized by incorporating trehalose into the foodstuff or beverage which is to be dried.

A method of drying a water-containing food material to be made into or used as food, comprising the steps of incorporating an effective amount of trehalose into the food material and drying said food material at a temperature above ambient temperature.
