A coalescing system for separating immiscible components of different densities mixed in a fluid has a vessel with a fluid inlet and a lighter component outlet and a heavier component outlet, a coalescing stack formed of at least a first coalescing plate and a second coalescing plate arranged in spaced relation to each other, and a plurality of pegs affixed to each of the first coalescing plate and the second coalescing plate. The plurality of pegs of the first coalescing plate engaging the plurality of pegs of the second coalescing plate in a first position so as to define a first distance between the first coalescing plate and the second coalescing plate. The first coalescing plate being movable with respect to the second coalescing plate to a second position such that an engagement between the plurality of pegs of the first coalescing plate and the plurality of pegs of the second coalescing plate defines a second distance between the coalescing plates. The first distance is different than the second distance.
