Abstract
A microwave burn prevention agent for preventing microwave burn of food caused by microwave heating is provided.
Claims11
A microwave burn prevention agent for preventing microwave burn of food caused by microwave heating, the microwave burn prevention agent, comprising:
- an oil-based component containing an oil and/or a fat and an emulsifier, and a polysaccharide thickener,
- wherein the microwave burn prevention agent is used as an emulsion having a viscosity of 100 to 13500 mPa·s (25° C.) or as an emulsion with a viscosity of 100 to 13500 mPa·s (25° C.) with added water.
A microwave burn prevention agent for preventing microwave burn of starch-containing food caused by microwave heating,
- wherein the microwave burn prevention agent is applied to a starch-containing food between a heating and cooking step and a freezing or refrigeration step of the starch-containing food, wherein the microwave burn prevention agent contains 70 to 99.9 mass % of an oil and/or a fat and 0.1 to 30 mass % of an emulsifier,
- wherein the emulsifier is one or more selected from propylene glycol fatty acid esters, polyglycerol fatty acid esters having HLB of 2 to 8, polyglycerol condensed-ricinoleate esters, organic acid monoglycerides, sucrose fatty acid esters having HLB of 1 to 3, and sorbitan fatty acid esters having HLB of 2 to 8.
