Abstract
A method of culturing a microorganism, the method including: (i) providing a solution containing a microorganism; (ii) acoustically treating the solution with sound waves having a sine waveform at a preselected frequency and at a power intensity of less than 10 W/cm2 to produce a minimum 10% increase in microorganism concentration compared to a non-acoustically treated solution for a same treatment time, wherein the solution is acoustically treated in a vessel having a volume of at least 12.5 L; and (iii) optionally isolating the acoustically-treated microorganism.
Claims22
A method of culturing a microorganism, the method including:
- (i) providing a solution containing a microorganism;
- (ii) acoustically treating the solution with sound waves having a sine waveform at a preselected frequency and at a power intensity of less than 10 W/cm2 to produce a minimum 10% increase in microorganism concentration compared to a non-acoustically treated solution for a same treatment time, wherein the solution is acoustically treated in a vessel having a volume of at least 12.5 L;
- and
- (iii) optionally isolating the acoustically-treated microorganism.
A method of producing a yeast-fermented food product according to the invention may comprise:
- (i) providing a precursor of the food product;
- (ii) inoculating the precursor with a microorganism to form an inoculate;
- (iii) acoustically treating the inoculate with sound waves having a sine waveform at a preselected frequency and at a power intensity of less than 10 W/cm2 to produce a minimum 10% reduction in fermentation time compared to a non-acoustically-treated inoculate and form a fermentate, wherein the inoculate is acoustically treated in a vessel having a volume of at least 12.5 L;
- and
- (iv) optionally removing the yeast from the fermentate and forming the fermented food product.
An acoustic device comprising:
- a housing having a first end that is configured to receive a sound generator and a second end including a connector that is connectable to a fermenter or microorganism culturing tank having a volume of at least 12.5 L;
- and
- a sound generator located within the housing configured to transmit sound waves having a sine waveform at a preselected frequency and at a power intensity of less than 10 W/cm2 into the fermenter or microbial culturing tank.
