Abstract
The present invention relates to: an enzyme protein comprising a mutated amino acid sequence and having the fructose-to-allulose conversion activity; a recombinant microorganism including a gene encoding the enzyme protein; a composition for producing allulose comprising the recombinant microorganism; and a method of producing allulose by using the recombinant microorganism.
Claims15
An allulose-3-epimerase protein having a sequence with at least 80% sequence identity to a sequence in which
- at least one amino acid selected from the group consisting of amino acids at positions 23, 75, 115, 126, 255, 267, and 269 from the N-terminus of the amino acid sequence of SEQ ID NO:
- 1 is substituted with at least one amino acid selected from the group consisting of isoleucine (I), glutamic acid (E), glycine (G), valine (V), alanine (A), and lysine (K),
- provided that an enzyme protein having the amino acid sequence of SEQ ID NO:
- 1 is excluded.
