Abstract
The present disclosure relates to a packaged cut fresh garlic product and methods of making.
Claims20
A method of manufacturing packaged cut fresh garlic, the method comprising:
- spraying ozonated water onto fresh garlic while simultaneously cutting the garlic to produce cut fresh garlic;
- cutting the garlic to produce cut fresh garlic;
- transporting the cut fresh garlic to a second location;
- spraying ozonated water onto the cut fresh garlic at a second location;
- and
- packaging the cut fresh garlic in packaging having at least one modified oxygen transfer rate (OTR) portion through which air from inside the packaging can exit the packaging.

A packaged garlic product, the product comprising:
- cut fresh garlic;
- and
- a sealed plastic pouch enclosing the cut fresh garlic and having a headspace, wherein an oxygen equilibrium concentration of the headspace is from about 0.5 wt.% to about 10 wt.%.
