An impinging air duct and a conveyor oven that employs the duct. A conveyor moves a food product through the oven, where heated air is passed through the ducts and onto the food to cook it. One or more ducts can be above and/or below the conveyor. The duct has a housing with a jet plate connected thereto, with orifices in the jet plate. The housing has one or more apertures thereon, and a moveable shutter connected to the housing. The shutter can be adjusted to completely cover the apertures on the housing, completely expose the apertures on the housing, or any amount in between. When the shutter at least partially exposes the housing aperture, the pressure in the duct will drop, but still remain uniform. The pressure at any point in the duct can be within 10%, more preferably 5%, or the average pressure across the entire duct.
