Claims21
A process for preparing a vinegar comprising providing a starting vinegar derived from dicotyledonous plant material or preparing a starting vinegar according to the steps of:
- a) providing a plant-derived material in a liquid form or in an aqueous dispersion, wherein the plant-derived material is derived from a dicotyledonous plant or part thereof,
- b) subjecting the plant-derived material to ethanol fermentation to obtain a fermented material,
- c) subjecting the fermented material resulting from step b) to acetic fermentation to result in a starting vinegar,
- and applying a heating regime according to one of the following time and temperature combinations:
- 90 to 105° C., and from 1 to 4 hours, or
- 100 to 115° C., and from 30 minutes to 3 hours, or
- 115 to 125° C., and from 20 minutes to 2.5 hours, or
- 125 to 140° C., and from 5 minutes to 1 hour, on the plant-derived material of step a) or on the starting vinegar,
- wherein the vinegar has a sugar content below 15 wt %.
A vinegar comprising 5-hydroxymethylfuraldehyde, and having a sugar content of below 15 wt %.
(canceled)
The oil-in-water emulsified food composition according to 12, wherein the vinegar is present in an amount of from 1 to 3 wt %, based on the weight of the oil-in-water emulsion.
