Fruit clamping tool, in particular for clamping peaches, machine and method for pitting fruit with such a tool

A clamping tool for clamping a fruit, in particular peaches, in a given position in a processing station of a pitting machine, the clamping tool having a tubular shape and extending about a given axis and being provided with:

• a first opening configured to allow the clamping tool to be arranged over and around the fruit;
• a second opening smaller than the first opening and arranged on the opposite side of the first opening to allow the insertion of cutting tools inside the clamping tool in a direction parallel to said axis;
• two through channels substantially parallel to said axis extending from the first openings to the second opening;
• and
• two walls facing each other and separated by said channels and converging towards said axis between said first and second openings.
