Abstract
The present invention is directed to compositions comprising inter alia, protein, Fabaceae flour and polysaccharide and use thereof, such as egg substitute compositions.

A composition comprising:
- a. 25% to 80% (w/w) protein;
- b. 5% to 50% (w/w) Fabaceae flour;
- and
- c. 5% to 60% (w/w) polysaccharide, wherein said protein and said polysaccharide are in a w/w ratio of 1:0.1 to 1:1.

A composition comprising (a) 25% to 80% (w/w) soy protein, potato protein, or both;
- (b) 5% to 50% (w/w) pea flour;
- (c) 10% to 60% (w/w) carrageenan, methyl cellulose, or both;

- and (e) 1% to 20% (w/w) yeast extract.
