Abstract
This invention provides an isomaltooligosaccharide (IMO) composite and the method to manufacture. According to this invention, isomaltooligosaccharide with a high level of sweetness can be provided without an additional process of adding fructose.
Claims10
A method for producing an isomaltooligosaccharide composite comprised of:
- A step to obtain a liquefied solution by contacting starch slurry to liquefied enzyme;
- A step to obtain isomaltooligosaccharide saccharified solution by contacting a primary saccharogenic enzyme and secondary saccharogenic enzyme with the aforementioned liquefied solution;
- and
- A step to produce fructose of 30 to 40% (w/w) based on the total solid weight by contacting isomerase with the aforementioned saccharified solution.
