Abstract
A method of producing 5-ketofructose using an acetic acid bacterium which is genetically modified to express a fructose dehydrogenase as well as to microorganisms which can be used in said method.
Claims31
A method for producing 5-ketofructose in an acetic acid bacterium, comprising the steps of:
- a) contacting a first acetic acid bacterium which is genetically modified to express a fructose dehydrogenase with a solution comprising a carbohydrate in fed-batch mode;
- and
- b) isolating the 5-ketofructose.
