Probiotic Grain-Based Compositions

A food composition comprising a grain and isolated Bacillus coagulans spores, wherein the grain comprises a grain of wheat, a grain of rice, a grain of quinoa, a grain of fonio, a grain of barley, a grain of corn, a grain of buckwheat, a grain of rye, a grain of sorghum, a grain of millet, a grain of triticale, a grain of teff, or grits.

A method of preparing a food composition, comprising

• (a) combining a composition comprising a grain and isolated Bacillus coagulans spores with a liquid comprising water;
• and
• (b) heating the combination to about 100° C.
