Abstract
The present invention concerns concentrating dairy proteins. Methods of the invention include the production and use of negatively-charged ultrafiltration membranes to achieve high hydraulic permeability with low sieving coefficients.
Claims25
A method of concentrating dairy proteins comprising:
- (a) providing a protein mixture containing one or more dairy proteins;
- (b) contacting said mixture with said negatively charged ultrafiltration membrane wherein said ultrafiltration membrane has a molecular weight cutoff of 100 kDa or greater and a negative charge of more than 3 milliequivalents per square meter,
- wherein said method produces a hydraulic permeability of more than 120 Liters per hour per square meter per bar and a protein sieving coefficient of no more than about 0.05.
