Abstract
Carboxylic anhydrides are highly suitable as additive for industrial materials, cosmetics, pharmaceutics and foodstuffs, in particular beverages, for protecting them against attack and/or destruction by microorganisms.

A process for protecting a beverage against attack and/or destruction by a microorganism comprising:
- contacting said beverage with at least one carboxylic anhydride selected from the group consisting of benzoic anhydride and sorbic anhydride.
