A fat ingredient having the formula (I):

• wherein c is 0 to 26;
• the remainder of said R1, R2 and R3 are selected from the group consisting of hydrogen, C1 to C12, and hydroxy fatty acids of formula II.

A fat ingredient having the formula (I):

• wherein at least one of said R1, R2 and R3 is selected from the group consisting of, formula (II):

• wherein a is 0 to 26, b is 0 to 26, and c is 0 to 26;
