Abstract
The present invention relates to a dried coffee powder obtainable by a process comprising membrane filtration of a low temperature extract of roasted and ground coffee beans to reduce the concentration of low molecular weight components and drying the filtered coffee extract.
Claims20
An instant coffee product, the instant coffee product comprising:
- a jar;
- and
- a dried coffee powder within the jar, the dried coffee powder obtained by a process comprising:
- extracting coffee solids from roasted and ground coffee beans using water at a temperature between 0 and 140° C. to obtain a first coffee extract;
- performing membrane filtration of the first coffee extract to reduce a concentration of low molecular weight components and obtain filtered coffee extract, the low molecular weight components having a molecular weight less than about 1 kDa;
- and
- drying the filtered coffee extract.
