Abstract
The present disclosure relates to a process for the production of a liquid coffee concentrate that has an improved storage stability at ambient temperature. The process comprises separating coffee extract resulting in a high aromatic coffee extract and a low aromatic coffee extract and subjecting the low aromatic coffee extract to a heat treatment and, optionally, a pH rising step.
Claims4
A liquid coffee concentrate comprising:
- a coffee solids content of above 15% by weight to 50% by weight,
- a Quinic acid/Quinic acid lactone mol/mol ratio between 10 and 100;
- no added edible alkali source,
- wherein the liquid coffee concentrate has a pH between 4.8 and 5.2,
- wherein the coffee solids are water extracted coffee substances, and
- wherein the pH of the liquid coffee concentrate remains between 4.8 and 5.2 at 7 weeks of shelf storage at ambient temperature;
- wherein Quinic acid stands for 1,3,4,5-tetrahydroxycyclohexanecarboxylic acid;
- and wherein Quinic acid lactone stands for 1,3,4-trihydroxy-6-oxabicyclo[3.2.1]octan-7-one.

A liquid coffee concentrate comprising:
- a coffee solids content of above 15% by weight to 50% by weight,
- at least 2 mg/kg coffee solids of 2-phenyl-3-(2-furyl)-2-propenal, and
- a Quinic acid/Quinic acid lactone mol/mol ratio between 10 and 100,
- no added edible alkali source,
- wherein the liquid coffee concentrate has a pH of 4.8 to 6,
- wherein the coffee solids are water extracted coffee substances, and
- wherein the pH of the liquid coffee concentrate remains at 4.8 to 5.2 at 7 weeks of shelf storage at ambient temperature;
- wherein Quinic acid stands for 1,3,4,5-tetrahydroxycyclohexanecarboxylic acid;
- and wherein Quinic acid lactone stands for 1,3,4-trihydroxy-6-oxabicyclo[3.2.1]octan-7-one.
