Materials and method for modifying a biochemical component in a plant

A method of producing a food product with increased protein content comprising:

• (a) obtaining a transgenic plant or a transgenic part thereof, wherein the transgenic plant or the transgenic part thereof is transformed with a polynucleotide, which encodes an Arabidopsis Qua-Quine Starch (QQS) polypeptide, operably linked to a non-native promoter that expresses the QQS polypeptide in the transgenic plant or the transgenic part thereof;
• (b) selecting the transgenic plant or the transgenic part thereof with increased total protein content compared to the total protein content in a corresponding wild-type (WT) plant or a corresponding WT part thereof that does not comprise and express the polynucleotide, which encodes the Arabidopsis QQS polypeptide, operably linked to the non-native promoter;
• and
• (c) preparing the food product from the transgenic plant or the transgenic part thereof with increased total protein content,
• whereupon the food product with increased protein content is produced.
