Abstract
Various ingredients and compositions are prepared from Stevia rebaudiana Bertoni plant. The compositions can be used as bulking agents, and sweeteners in foods, beverages, cosmetics and pharmaceuticals.
Claims3
A tabletop sweetener composition, consisting essentially of:
- stevia-derived microcrystalline cellulose ingredient as a sole bulking agent;
- and
- a steviol glycoside sweetener;
- wherein the tabletop sweetener is in dry powder form, contains no non-stevia based ingredients, and wherein the stevia-derived microcrystalline cellulose ingredient is made by a process comprising the steps of:
- (a) removing water-insoluble components from a stevia biomass;
- (b) incubating the water-insoluble components in an alkaline solution to produce a pulp;
- (c) washing the pulp to obtain a washed pulp;
- (d) bleaching the washed pulp to obtain a bleached pulp;
- and
- (e) separating cellulose from the bleached pulp.
