Claims16
A method for manufacturing a nutritional composition, the method comprising:
- (a) preparing a slurry comprising water and carbohydrate, wherein the slurry contains from 0 to 5 wt % of triglycerides based on the weight of the slurry;
- (b) adding a fatty acid component and monoglycerol palmitate, wherein the fatty acid component is selected from the group consisting of free fatty acids, fatty acid salts, and combinations thereof, wherein the fatty acid component is obtained from a source of oil or fat that contains a total of less than about 20 wt % of palmitic acid, stearic acid, myristic acid, or combinations thereof, and wherein at least 70% of palmitic acid residues in the monoglycerol palmitate are at the Sn-1 position;
- (c) subsequent to (b), adding protein and fat with agitation;
- and then
- (d) homogenizing the slurry to form a nutritional composition,
- wherein the nutritional composition comprises at least about 10 wt % of the fatty acid component and at least about 10 wt % of the monoglycerol palmitate, based on the total weight of the fat in the nutritional composition,
- wherein the nutritional composition is an infant formula.
