Abstract
The present invention provides α-keto peracids and methods for producing and using the same. In particular, α-keto peracids are useful as antimicrobial agents.
Claims20
An antimicrobial composition comprising the products of a method comprising contacting an α-keto carboxylic acid or a salt thereof with an oxidizing agent to form a mixture, and allowing the mixture to stand at a temperature of −30° C. to 4° C., wherein the products comprise an α-keto peracid.
