Abstract
The present invention relates to the use of one or more compounds of the formulae and/or pharmaceutically acceptable salts thereof for inhibiting the oxidation of fatty acids and/or triacylglycerols; and/or the rancidification of products that includes one or more of fatty acids and/or one or a plurality of triacylglycerols; and/or chemical and/or sensory changes of products that includes one or more of fatty acids and/or one or a plurality of triacylglycerols, caused by the action of the oxygen of the air. Corresponding mixtures and orally consumable preparations and methods are also described.
Claims42
A method for inhibiting the oxidation of fatty acids and/or triacylglycerols catalyzed by divalent or higher-valent metal ions or for inhibiting the rancidification of products that comprise one or more fatty acids and/or one or more triacylglycerols catalyzed by divalent or higher-valent metal ions comprising:
- (a) forming a mixture of the fatty acids and/or triacylglycerols with one or more compounds selected from the group consisting of:
- i) a compounds of formula (I)
- wherein each R1 independently denotes H, OH, or NH2;
- and
- each R2 independently denotes OH, OCH3, OC2H5, OCH2CH2CH3, NHCH3, NHC2H5, or NHCH2CH2CH3;
- or a pharmaceutically acceptable salt thereof;
- ii) a compound of formula (II)
- wherein each R5 independently denotes H or CH3;
- and
- x denotes CH2 or CO;
- or a pharmaceutically acceptable salt thereof;
- and
- iii) a compound of formula (III)
- or a pharmaceutically acceptable salt thereof;
- and
- (b) inhibiting the oxidation of the fatty acids and/or triacylglycerols catalyzed by divalent or higher-valent metal ions.
