Abstract
Methods for producing brewed beverages include brewing the beverage, degassing the beverage prior to storing the beverage in a sealed container, and freezing the beverage. A frozen brewed beverage is configured to be reheated prior to consumption and does not require reconstituting. A brewed beverage is in a sealed container, has a dissolved oxygen content less than about 2 ppm, is configured to be reheated prior to consumption, and does not require reconstituting.
Claims19
A method for producing brewed beverages comprising:
- brewing and degassing a beverage to produce a degassed brewed beverage in a liquid state having a reduced dissolved oxygen content of 2 ppm or less, wherein the degassing is performed by using a technique selected from the group consisting of boiling at atmospheric pressure, boiling under reduced pressure, sonication under reduced pressure, purging by bubbling an inert gas, passing the beverage solution through a polymeric semipermeable membrane tube surrounded by a vacuum, connecting a closed vessel containing the beverage solution to a vacuum pump, vigorously agitating the beverage in a closed container that has been purged with an inert gas, and combinations thereof;
- storing the degassed brewed beverage having a reduced dissolved oxygen content of 2 ppm or less by sealing the degassed brewed beverage in an oxygen permeable container;
- and
- freezing the degassed brewed beverage in the oxygen permeable container within a time period of one hour or less so that the degassed brewed beverage has a dissolved oxygen level of 2 ppm or less upon freezing, and such that the frozen degassed brewed beverage forms an oxygen barrier that maintains the frozen degassed brewed beverage's reduced dissolved oxygen content of 2 ppm or less by limiting the ingress of oxygen into the degassed brewed beverage while frozen and stored in a container permeable to oxygen.
A method for producing a coffee beverage, comprising:
- brewing the coffee beverage to form a brewed coffee beverage;
- reducing a dissolved oxygen content of the brewed coffee beverage to 2 ppm or less by degassing the brewed coffee, wherein the degassing is performed by using a technique selected from the group consisting of boiling at atmospheric pressure, boiling under reduced pressure, sonication under reduced pressure, purging by bubbling an inert gas, passing the beverage solution through a polymeric semipermeable membrane tube surrounded by a vacuum, connecting a closed vessel containing the beverage solution to a vacuum pump, vigorously agitating the beverage in a closed container that has been purged with an inert gas, and combinations thereof;
- storing the brewed coffee beverage having a dissolved oxygen content of 2 ppm or less in an oxygen-permeable container;
- and
- transitioning the stored brewed coffee beverage from a liquid state to a solid state by freezing the brewed coffee beverage before the brewed coffee beverage returns to a dissolved oxygen level greater than 2 ppm so that the frozen brewed coffee beverage has a dissolved oxygen level of 2 ppm or less upon freezing and maintains the dissolved oxygen content of 2 ppm or less while frozen in the oxygen-permeable container for at least a period of one year.
A method for producing coffee beverages, comprising:
- reducing a dissolved oxygen content of a liquid saturated with oxygen by degassing the saturated liquid to form a degassed liquid, wherein the degassing is performed by using a technique selected from the group consisting of boiling at atmospheric pressure, boiling under reduced pressure, sonication under reduced pressure, purging by bubbling an inert gas, passing the beverage solution through a polymeric semipermeable membrane tube surrounded by a vacuum, connecting a closed vessel containing the beverage solution to a vacuum pump, vigorously agitating the beverage in a closed container that has been purged with an inert gas, and combinations thereof;
- brewing a coffee beverage using the degassed liquid to form a degassed coffee beverage having a reduced dissolved oxygen content from the liquid saturated with oxygen at room temperature;
- storing the degassed coffee beverage in an oxygen-permeable polymer container;
- and
- transitioning the stored degassed coffee beverage from a liquid state to a solid state by freezing the degassed coffee beverage before the degassed coffee beverage re-saturates with oxygen to maintain the reduced dissolved oxygen content of the frozen degassed brewed coffee beverage while frozen.
A method for producing brewed beverages comprising:
- producing a brewed beverage in a liquid state having a dissolved oxygen content of 2 ppm or less by degassing the brewed beverage, wherein the degassing is performed by using a technique selected from the group consisting of boiling at atmospheric pressure, boiling under reduced pressure, sonication under reduced pressure, purging by bubbling an inert gas, passing the beverage solution through a polymeric semipermeable membrane tube surrounded by a vacuum, connecting a closed vessel containing the beverage solution to a vacuum pump, vigorously agitating the beverage in a closed container that has been purged with an inert gas, and combinations thereof;
- storing the brewed beverage having a dissolved oxygen content of 2 ppm or less in an oxygen permeable container;
- and
- freezing the brewed beverage in the oxygen permeable container within a period of time required so that the brewed beverage has a dissolved oxygen content of 2 ppm or less at the time of freezing and maintains the dissolved oxygen content of 2 ppm or less for at least a period of one year while frozen and stored in the oxygen permeable container.
