Abstract
A method for producing a concentrated cereal-based extract for the production of food products, in particular clear and haze-free cereal-based beverages.
Claims19
A method of producing a non-fermented, non-alcoholic haze-free malt beverage comprising the following steps performed in the following order:
- (i) subjecting a wort to a heat treatment with a stabilisation agent;
- (ii) subjecting the heat-treated wort to a cold stabilisation step, wherein the wort is chilled and the solids from said chilled wort are separated to obtain a clarified wort;
- (iii) subjecting the clarified wort to a concentration step, wherein the dry matter content of the wort is increased to a dry matter content of at least 30% by weight to obtain a concentrate;
- (iv) subjecting the concentrate to a hot filtration step at a temperature in the range of about 30-90° C. to obtain the concentrated cereal-based extract;
- and
- (v) reconstituting the concentrated cereal-based extract with water to obtain a non-fermented, non-alcoholic haze-free malt beverage.
A method of producing a non-fermented, non-alcoholic haze-free malt beverage, said method comprising the step of reconstituting a concentrated cereal-based extract with water to obtain a non-fermented, non-alcoholic haze-free malt beverage, wherein said concentrated cereal-based extract has been produced by the following steps performed in the following order:
- (i) subjecting a wort to a heat treatment with a stabilisation agent;
- (ii) subjecting the heat-treated wort to a cold stabilisation step, wherein the wort is chilled and the solids from said chilled wort are separated to obtain a clarified wort;
- (iii) subjecting the clarified wort to a concentration step, wherein the dry matter content of the wort is increased to a dry matter content of at least 30% by weight to obtain a concentrate;
- and
- (iv) subjecting the concentrate to a hot filtration step at a temperature in the range of 30-90° C. to obtain a concentrated cereal-based extract.
