Abstract
Disclosed is a thermostable tannase derived from a microorganism. Specifically disclosed is a thermostable tannase derived from Aspergillus awamori or Aspergillus niger. A preferred embodiment of the tannase has the following chemoenzymatic properties: (1) activity: to act on a depside bond to thereby cause hydrolysis; (2) molecular weight: about 230,000 Da (as measured by gel filtration); and (3) thermal stability: stable at a temperature up to 65° C. (pH 5.0, 30 min.).
Claims3
A recombinant vector comprising a DNA selected from the group consisting of the following (A) to (D):
- (A) a DNA encoding the amino acid sequence set forth in SEQ ID NO:
- 5;
- (B) a DNA comprising the base sequence set forth in SEQ ID NO:
- 4;
- (C) a DNA having a base sequence that is at least 95% identical to the base sequence set forth in SEQ ID NO:
- 4 and encoding a protein that has a tannase activity;
- and
- (D) a DNA encoding a protein that is at least 95% identical to the amino acid sequence set forth in SEQ ID NO:
- 5 and that has a tannase activity.
