Abstract
The present invention relates to specially selected catalase enzymes and their use in reducing hydrogen peroxide in applications, and particularly in aseptic packaging applications.
Claims18
A method of disinfecting packages through aseptic packaging comprising
- (a) providing an antimicrobial composition comprising
- (i) from about 20 ppm to about 250 ppm of a catalase enzyme selected from the group consisting of bovine derived catalase, fungal derived catalase, and mixtures thereof, wherein the catalase maintains 50% of its activity over a period of one hour at a pH from about 2.0 to about 2.5;
- (ii) from about 0.00001% to about 0.5 wt. % hydrogen peroxide;
- (iii) a C1-C10 carboxylic acid;
- and
- (iv) a C1-C10 percarboxylic acid;
- and
- (b) applying the antimicrobial composition to a surface of a food package at a temperature of about 20° C. to about 40° C.
