Abstract
The present invention relates to a method of manufacturing a stable composition enriched in cis-lycopene (z-isomers) by prolonged heating in solvents of tomatoes, parts of tomatoes, derivative thereof or tomato extracts in solvents.
Claims4
A method of manufacturing a stable composition enriched in cis-lycopene (Z isomers) comprising:
- extracting lycopene from a lycopene-containing material by prolonged continuous heating in a solvent at a temperature of from 50° C. to 150° C. for a period of from 4 to 240 hours, and then removing the solvent therefrom to recover said stable composition enriched in cis-lycopene.
