A novel Streptococcus thermophilus (ST) bacterium that gives improved texture in e.g. a fermented milk dairy product.
Claims1
An isolated strain of lactic acid bacterium Streptococcus thermophiles (ST) deposited under the accession number D5M 17876 or a mutant strain thereof, wherein the mutant strain is obtained from the deposited strain as starting material, and wherein the mutant has the same texturizing properties as parent strain DSM 17876, or has improved texturizing properties compared to said parent strain DSM 17876.
