Device for processing poultry wings

A process for trussing up meat attached to at least two elongated bones of a poultry part around an end of the poultry part, characterized in that the process comprises the steps of loading each of a series of poultry parts into a trussing up unit at a loading position and positioning the at least two bones of the poultry part into bone positioning means, displacing each trussing up unit from the loading position towards and along a trussing up pathway and fixing the at least two bones into the bone positioning means, displacing the at least two bones partly through the meat through at least one of the bone positioning means by means of a pusher such that the meat of the poultry part is trussed up around an end part of one of the bones, retracting at least only one of the other bones from the meat while the bone on which the meat is trussed up remains in the trussed up part, and removing the trussed up poultry part.
