Abstract
Polynucleotides encoding polypeptides that comprise the biosynthetic pathway for phenylpropanoids and flavonoids in the coffee plant are disclosed. Also disclosed are methods for using these polynucleotides and polypeptides for the manipulation of flavor, aroma, and other features of coffee beans, as well as the manipulation resistance to pathogen, herbivore, and insect attack in the coffee plant.
Claims18
A nucleic acid molecule isolated from coffee (Coffea spp.), having a coding sequence that encodes a phenylalanine ammonia lyase, wherein the phenylalanine ammonia lyase comprises an amino acid sequence at least 95% identical to SEQ ID NO:
- 20 or 22 or comprises an amino acid sequence identical to SEQ ID NO:
- 21.
A method of modulating flavor or aroma of coffee beans, comprising modulating production or activity of one or more phenylalanine ammonia lyase enzymes within coffee seeds by introducing into a coffee plant a nucleic acid molecule encoding a phenylalanine ammonia lyase enzyme operably linked to a promoter in the sense or antisense orientation, wherein the phenylalanine ammonia lyase comprises an amino acid sequence at least 95% identical to SEQ ID NO:
- 20 or 22 or comprises an amino acid sequence identical to SEQ ID NO:
- 21.
