Abstract
A Bowman-Birk Inhibitor Concentrate (BBIC) that has a high protein content. The BBIC is made from conventional soybeans using ultrafiltration, without acid or alcohol extraction or acetone precipitation.

A Bowman-Birk inhibitor soy protein concentrate product having more than about 65 wt.% soy protein on a dry basis and a chymotrypsin inhibitor level of at least 110 mg/g, wherein the Bowman-Birk inhibitor soy protein concentrate product is derived from a non-acidic aqueous extract of soy flour.
