Abstract
The present invention is related to a method for producing a phospholipase by processing an expressed fungal peptide and to certain specified phospholipases. Furthermore the invention provides a method for producing cheese with a phospholipase.
Claims17
An isolated phospholipase which is any of the following:
- (a) a polypeptide which has an amino acid sequence that has at least 90% identity with the amino acid sequence of amino acids 29 to 149 of SEQ ID NO:
- 16;
- and
- (b) a fragment of the amino acid sequence of amino acids 29 to 149 of SEQ ID NO:
- 16 which has phospholipase activity.
