Abstract
The present invention relates to a process for producing efficiently glutamic acid derivatives (including salts thereof) such as monatin by converting a substituted α-keto acid of formula (1) into a glutamic acid derivative of formula (2) in the presence of an enzyme catalyzing conversion of the same
Claims26
A process for producing 3-indolepyruvic acid comprising:
- exposing tryptophan to a first enzyme, having amino oxidase activity and a second enzyme having catalase activity, wherein said enzymes are derived from a microorganism having amino acid oxidase activity and catalse activity and said first enzyme catalyzes a conversion reaction of tryptophan to 3-indolepyruvic acid and said second enzyme decomposes hydrogen peroxide;
- and a step of subjecting said reaction to deaeration or deoxygen conditions under pH 2 or less.
A process for producing 3-indolepyruvic acid comprising:
- exposing tryptophan to microbial cells, wherein said cells have amino acid oxidase activity and catalase activity and said cells catalyze the conversion of tryptophan to 3-indolepuyruvic acid;
- and a step of subjecting said reaction to deaeration or deoxygen conditions under pH 2 or less.
