Abstract
The invention provides a novel starch branching enzyme that is bound to A-type starch granules in wheat, barley, rye or triticale. The enzyme is not substantially associated with B-type starch granules. A cDNA sequence encoding an isoform of the enzyme has been isolated from the wheat cultivar Fielder and deduced amino acid sequence has been determined.
Claims3
An isolated starch branching enzyme characterized in that it is bound to A-type starch granules in wheat, rye, barley or triticale endosperm, said enzyme comprising an amino acid sequence as shown in SEQ ID NO:2.
A method for modifying starch comprising a step of exposing glucose polymers to a starch branching enzyme that is bound to A-type starch granules in wheat, rye, barley or triticale endosperm, wherein the starch branching enzyme comprises an amino acid sequence as shown in SEQ ID NO:2.
