Abstract
This invention relates to a water-soluble bean-based extract including one or more isoflavone glycosides. Also shown is a method of preparing such a water-soluble bean-based extract.

A method of preparing a water-soluble bean-based extract comprising:
- mixing a pulverized crude bean-based extract with water;
- heating the mixture;
- adding a coagulant to the mixture to from a suspension;
- heating the suspension;
- and
- collecting a supernatant of the suspension to obtain a water-soluble bean-based extract.

A method of preparing a water-soluble bean-based extract comprising:
- mixing about 1 to about 50 parts by weight of a pulverized crude bean-based extract with about 100 parts by weight of water;
- heating the mixture to between about 60° C. and about 100° C. for about 10 to about 120 minutes;
- adding a coagulant to the mixture to form a suspension;
- heating the suspension to between about 30° C. and about loot for about 1 to about 120 minutes;
- and
- collecting a supernatant of the suspension to obtain a water-soluble bean-based extract.
