Abstract
The invention described in this application relates to food compositions such as breakfast cereals, bread and the like which have an enhanced dietary fiber content. In each case the source of dietary fiber is a starch, preferably a maize starch, having an amylose content of 50% or more, the starch being incorporated into a food composition as appropriate. Alternatively, grains or legumes or parts thereof which include starch of this amylose content may be used.
Claims10
A food composition comprising a breakfast cereal having an enhanced dietary fiber content comprising a food and a food ingredient, said food ingredient comprising substantially chemically unmodified starch granules from a grain, said starch granules comprising about 10-60% w/w of resistant starch and having an amylose content of at least about 70% w/w, or if starch granules from rice, an amylose content of at least about 27% w/w, said starch granules providing a sufficient resistant starch so as to yield an enhanced dietary fiber content in the food composition of about 1.5% w/w or more.
