Abstract
The invention provides a meat product comprising extruded inner core of meat substrate and one or more co-extruded outer layers wholly or partly around the core, wherein at least one of the outer layers consists of a meat or fat emulsion. The fibers within the meat or fat emulsion layer are distributed substantially uniformly within the emulsion layer and are disoriented, so as to improve the cohesiveness of that layer. The invention also provides an extrusion nozzle for forming the meat product of the invention.
Claims15
A meat product comprising an extruded inner core of meat substrate and one or more co-extruded outer layers of the same or different substrate disposed wholly or partly around the core, at least one of the outer layers extending wholly around the inner core and comprising a meat emulsion or fat emulsion having fibres, said fibres within the meat emulsion or fat emulsion layer being disoriented so as to improve the cohesiveness of said meat emulsion or fat emulsion layer, thereby strengthening said meat emulsion or fat emulsion layer against splitting along a direction of extrusion of said meat product when cooked.
A meat product comprising:
- an extruded inner core of meat;
- at least one co-extruded outer layer of food substrate disposed wholly around the core, the outer layer comprising a meat emulsion or fat emulsion having fibres, said fibres within the meat emulsion or fat emulsion layer being disoriented so as to improve the cohesiveness of the meat emulsion or fat emulsion layer, thereby strengthening said meat emulsion or fat emulsion layer against splitting along a direction of extrusion of said meat product when cooked;
- and
- a flexible casing disposed around said outer layer.
An elongated and layered meat product adapted to resist splitting and delamination when cooked, said meat product comprising:
- a continuous outer layer comprising an emulsion of meat or fat having fibers distributed substantially uniformly and randomly between an outer surface of said outer layer and an inner surface of said outer layer, said fibers of said emulsion being disoriented throughout said outer layer;
- a core formed from a meat substrate and encapsulated along its length by said outer layer, an outer surface of said core being adhered to said inner surface of said outer layer;
- said disoriented fibers of said outer layer resisting splitting of said outer surface of said outer layer when cooked, and said disoriented fibers of said outer layer resisting delamination of said inner surface of said outer layer from said outer surface of said core when cooked.
