Use of the complexes as a preventative antifungi treatment for natural products. A method for preventing the infection of a natural product by fungi, the method comprising treating the natural product with the complex.

An isolated antifungal complex comprising natamycin complexed to proteins and/or amino acids, wherein the amounts of natamycin and proteins and/or amino acids, when present in water, do not produce crystals visible at 400×magnification.
