Abstract
An acid-stable .beta.-glucosidase that may be prepared from filamentous fungi and has very low glucose inhibition sensitivity is disclosed. Said .beta.-glucosidase is particularly useful for preparing fruit juices and in enzymatic cellulose hydrolysis methods.
Claims12
A purified preparation of .beta.-glucosidase, which is exocellular .beta.-glucosidase obtained from filamentous fungi, whose molecular mass, estimated by exclusion chromotography, is about 30,000, the isoelectric point, determined by electrofocusing, is about 4.2, the optimum pH is 4.5 to 6.0, the inhibition constant (Ki) for glucose is about 950 mM, and which retains its full activity after incubating for 24 hours at pH 3.0 and at 20.degree. C.
