Abstract
The present invention relates to polypeptides having mutanase activity and isolated nucleic acid sequences encoding the polypeptides. The invention also relates to nucleic acid constructs, vectors, and host cells comprising the nucleic acid sequences as well as methods for producing the polypeptides. The present invention further relates to oral cavity compositions and methods for degrading mutan.
Claims8
An isolated polypeptide having mutanase activity obtained from a Penicillium purpurogenum strain which
- (a) has a pH optimum of about 3.0 to about 4.5 at 40.degree. C.;
- (b) has a temperature optimum throughout the range of 45.degree. C. to 55.degree. C. at pH 5.5;
- and
- (c) is encoded by a nucleic acid sequence which hybridizes under low stringency conditions with (i) the nucleic acid sequence of SEQ ID NO:2, or (ii) its complementary strand.
