Abstract
An isolated galactomannan having at least 50 repeating units of mannose and galactose in a ration of between 0.5-1.0 and 1.8-1.0, and having a protein content of less than 20 wt. %, a saponin content of less than 5 wt. %, and a lipid content of less than 1 wt. %, which can be used as an active ingredient in nutraceutical and cosmetic products.

An emulsified isolated fenugreek galactomannan having at least 50 repeating units of mannose and galactose in a ratio of between 0.5-1.0 and 1.8-1.0, and consisting essentially of isolated hydrocolloid galactomannan fractions in combination with impurities selected from the group consisting of a protein content of less than 20 wt. %, a saponin content of less than 5 wt. % a lipid content of less than 1 wt. % and mixtures thereof, said galactomannan being present in an amount of up to 0.7 wt. % of the total emulsion.
