Abstract
Yeast strains containing at least one copy of gene encoding a lactic bacteria lacticodeshydrogenase, under the control of sequences regulating the expression of said gene in the yeast. The invention also encompasses expression vectors for use in producing said yeast strains.
Claims6
A recombinant yeast strain for use in alcoholic fermentation and which comprises at least one copy of a gene coding for a lactic dehydrogenase (LDH) derived from a lactic acid bacterium, under the control of sequences regulating the expression of said gene in yeast.
A yeast expression cassette which comprises a gene coding for a lactic dehydrogenase (LDH) derived from a lactic acid bacterium operatively linked to at least one regulatory sequence which is active in yeast.
An expression vector which comprises an expression cassette which comprises a gene coding for a lactic dehydrogenase (LDH) derived from a lactic acid bacterium operatively linked to at least one regulatory sequence which is active in yeast.
