## Abstract

An antimicrobial composition comprising AIT and a polyhydric alcohol which may have aldehyde group or ketone group; an antimicrobial composition comprising a surfactant and said composition; a method for treating microorganisms; and a method for retaining freshness of vegetables, etc., both of which methods comprising treating the target substances such as perishables with the composition of the present invention or an aqueous solution containing said composition.

## Claims

### Claim 1

A water-soluble antimicrobial composition in the form of a liquid, a powder, a granule or a tablet, comprising 1 part by weight of allyl isothiocyanate, 1-100 parts by weight of a polyhydric alcohol optionally having an aldehyde group or a ketone group, and 0.05-1 part by weight of a surfactant having an HLB of 1-20 and comprising a glycerol, sorbitan or sucrose fatty acid ester.

### Claim 2 (depends on 1)

The antimicrobial composition of claim 1 in the form of a liquid.

### Claim 3 (depends on 1)

The antimicrobial composition of claim 1 in the form of a powder.

### Claim 4 (depends on 1)

The antimicrobial composition of claim 1 in the form of a granule.

### Claim 5 (depends on 1)

The antimicrobial composition of claim 1 in the form of a tablet.

### Claim 6 (depends on 1)

The antimicrobial composition of claim 1, wherein the polyhydric alcohol is a sugar.

### Claim 7 (depends on 6)

The antimicrobial composition of claim 6, wherein the sugar is a monosaccharide, a disaccharide or a polysaccharide.

### Claim 8 (depends on 7)

The antimicrobial composition of claim 7, wherein the sugar is selected from the group consisting of glucose, sorbitol, lactose, sucrose, maltose, and a starch.

### Claim 9 (depends on 1)

The antimicrobial composition of claim 1, wherein the polyhydric alcohol is a disaccharide.

### Claim 10 (depends on 9)

The antimicrobial composition of claim 9, wherein the disaccharide is maltose.

### Claim 11 (depends on 1)

The antimicrobial composition of claim 1, wherein the polyhydric alcohol is mannitol.

### Claim 12 (depends on 1)

The antimicrobial composition of claim 1, wherein the surfactant has an HLB of 7-16.

### Claim 13 (depends on 1)

The antimicrobial composition of claim 1, wherein the surfactant is selected from the group consisting of glycerol fatty acid ester sorbitan fatty acid ester, and sucrose fatty acid ester.

### Claim 14 (depends on 1)

A method for treating microorganisms, comprising washing a target substance with water containing an effective amount of the composition of claim 1, wherein the allyl isothiocyanate concentration in the water is 0.001-0.1 w/w %.

### Claim 15 (depends on 1)

The method for treating microorganisms, comprising spraying water containing an effective amount of the composition of claim 1 onto a target substance, said water containing the allyl isothiocyanate in a proportion of 0.001-0.1 w/w %.

### Claim 16 (depends on 1)

The method for treating microorganisms, comprising adding the composition of claim 1 or water containing an effective amount of the composition of claim 1 to a target substance, said target substance containing the allyl isothiocyanate in a proportion of 0.001-0.1 w/w %.
