Abstract
Pectin and Pectocellulosic compositions are prepared by heating and mixing comminuted pectin-containing material to solubilize pectin. Pectin, a pectocellulosic product, or a combination thereof is then recovered. The products produced are incorporated in food and other products.
Claims13
A method for preparing pectin and pectocellulosic compositions from a pectin-containing raw material comprising:
- comminuting the raw material;
- washing the ground material with water to remove soluble solids;
- heating and mixing the comminuted raw material to form a hydrolyzing mixture under conditions selected to at least partially solubilize the pectin;
- and
- isolating a product selected from the group consisting of pectin, a pectocellulosic product, and a combination thereof.
