A domestic cooking apparatus includes a layer of ceramic material having high temperature thermal shock resistance and a foil heating element disposed to heat at least a portion of the ceramic material to a temperature exceeding 200 degrees centigrade. A first insulation layer is disposed between the foil heating element and the layer of ceramic and a second insulation layer is disposed along the other side of the foil heating element. A metal layer is positioned between the ceramic material and the first insulation layer. A rigid metal layer is disposed along the lower side of the second insulation layer. A spring support is positioned to force the rigid metal layer against the other layers to provide intimate heat transfer engagement between the foil element and the layer of ceramic material while still allowing thermal displacement of the layers.
