Abstract
A gelling agent composition is provided which comprises depolymerized locust bean gum and a polysaccharide or mixture of polysaccharides capable of forming a gel in aqueous solution with locust bean gum. A method for producing the gelling agent and a comestible product containing it are also provided.

A gelling agent composition comprising depolymerized locust bean gum having an intrinsic viscosity of from 1.3 to 2.3 dl/g and a polysaccharide or mixture of polysaccharides that forms a gel in aqueous solution with locust bean gum.
A method of producing a gelling agent composition comprising the steps of:
- (i) depolymerizing locust bean gum to reduce the intrinsic viscosity to from 1.3 to 2.3 dl/g;
- and
- (ii) adding the depolymerized locust bean gum of step (i) to a polysaccharide or mixture of polysaccharides that forms a gel in aqueous solution with locust bean gum.
