Abstract
A method of making chocolate is disclosed. Here sugar alcohol, particularly erythritol or maltitol, is mixed with the remaining ingredients by dry couching at a temperature above 65.degree. C.

In a process for the production of chocolate comprising forming a mixture of the chocolate ingredients including, as sweetener, a sugar alcohol, and submitting the mixture to a conching step;
- the improvement which comprises the conching step is dry conching carried out at a temperature of at least 65.degree. C. and the sugar alcohol is erythritol or maltitol which has a purity greater than 90%.
