Abstract
A process for producing a stevioside derivative, which comprises reacting stevioside with a .beta.-1,3- or .beta.-1,4-glycosyl sugar compound in aqueous solution or aqueous suspension in the presence of a microorganism or enzyme having .beta.-1,3- or .beta.1,4-glycosyl transferring activity thereby to form .beta.-1,3- or .beta.-1,4-glycosyl stevioside.

A process for producing a sweetener containing a .beta.-1,3-glycosyl stevioside which is obtained by allowing an enzyme having .beta.-1,4-glycosyl transferring activity or a microorganism capable of producing such an enzyme to react on an aqueous solution or aqueous suspension containing stevioside and at least one .beta.-1,3-glycosyl sugar.
A process for producing a sweetener containing a .beta.-1,4-glycosyl stevioside which is obtained by allowing an enzyme having .beta.-1,4-glycosyl transferring activity or a microorganism capable of producing such an enzyme to react on an aqueous solution or aqueous suspension containing stevioside and at least one .beta.-1,4-glycosyl sugar.
